First, gourmet chefs recommend that you always have a fair bit of cast iron in your collection, especially in your baking dishes and Dutch ovens. For cornbreads, apple pancakes, and other such recipes, cast iron can create a smooth texture that you cannot achieve with any other pan. Unlike glass and other baking dishes, cast iron is porous, allowing it to truly hold the oils in to create a natural non-stick surface. Second, always add a few copper pots and pans into your cookware mix, preferably sauté pans and frying pans. Copper is simply the absolute best conductor of heat there is, and it will cook your food evenly and thoroughly every time. Make sure that your items are lined with stainless steel, though, as copper can transfer to foods when heated. Lesser copper products are coated with nickel and other metal alloys, though, so be wary of this if you have a nickel allergy. Finally, throw in a few non-stick aluminum pieces (stock pots or fryers) for everyday use as well. They are excellent conductors of heat, sometimes better than the more expensive stainless steel alternatives. To get a great selection of cookware online, stop by our search engine at Sortprice.com.
